A Spice Guide to Nigerian Cuisine: From Iru to Uda and More

You would  always find Nigeria and flavor together in any food conversation because Nigerian cuisine is renowned for its vibrant flavors, which are often achieved through the skillful use of a variety of spices. These spices add depth, complexity, and a unique aroma to dishes, making them truly unforgettable.Here’s a guide to some of the most essential spices used in Nigerian cooking:

Iru: The fermented product made from the seeds of the locust bean. It has a pungent, earthy flavor and is often used as a seasoning or flavor enhancer. Iru is particularly popular in the southern parts of Nigeria and is commonly added to soups, stews, and sauces.. Uda: The dried uda seeds also known as negro pepper, offers  a warm, slightly spicy aroma and taste.This spice is common in parts of Nigeria and in other African countries like Ethiopia, Cameroon, Senegal and Ghana. The Uda seed is used to add flavor to foods, especially pepper soup, nsala or white soup. 

Ogiri: Like iru, ogiri is made by fermentation. Ogiri is a food flavoring product produced from fermented oil seeds such as castor seeds or egusi seeds. It has a very strong aromatic smell that will leave your soups tasting superb. A delicious day is one with onugbu soup made with ogiri and paired with Ayoola Cassava Fufu.

Uziza: A leafy herb with a distinctive aroma and flavor, often used in soups to add depth and complexity. Uziza seeds are also popular and provide a stronger flavor to your soups  than the leaves. The leaves are used to make uziza soup or act as a garnish for other dishes.

Pepper: From tatase, to  rodo, ose nsukka, sombo and many more you’d see that Nigerian dishes are often accompanied with pepper, sometimes a dish can have more than one type of pepper in it, all functioning in different capacities to give the dish a great taste. 

Ehuru: Ehuru spice, sometimes referred to as African nutmeg, is used in Nigerian cuisine. Ehuru comes in a hard shell that holds the seed, which is pounded or grinded and added to traditional soups and cuisines as a powder. 

Yaji: A ground spice blend typically containing ground peanuts, chili peppers, ginger, and other spices. It’s often used as a seasoning for meats, fish, and soups.

Bay Leaf: This is not an spice that is indigenous to Nigeria but it has become a common addition in Nigerian jollof rice and tomato stew. The bay leaf is an aromatic leaf commonly used as a herb in cooking. It can be used whole, either dried or fresh, in which case it is removed from the dish before consumption.

Onion: A versatile bulb used in almost all Nigerian dishes for its flavor and aroma.Onion is considered one of the most important spices in lots of dishes, it can be used when frying, boiling or even cut into pieces and added as garnish. 

Crayfish: Dried and ground crayfish are a common ingredient in Nigeria foods, adding a unique flavor and texture. Nigerians don’t joke with crayfish especially when making traditional soups.

Curry Powder: While also not indigenous, curry powder is often used in Nigerian cuisine, especially in dishes influenced by Indian and British cooking. Curry powder in Nigeria is made by blending different spices like turmeric, coriander, cinnamon, cumin, black pepper, ginger, and cardamom

Ginger: A root spice used in soups, stews, sauces  and drinks for its warming and digestive properties.

Garlic: In Nigeria, garlic and ginger often go hand-in-hand especially when it comes to marinating meat or making stew. Garlic is a bulbous spice used in various dishes for its strong flavor and aroma.

Salt: We won’t end this list without mentioning the almighty salt!. It is used essentially for enhancing the flavor of any dish.
